This a very famous and popular European dessert that can be served with pretty much anything, for example, ice cream, pudding, fresh berries, whipped cream or just plain. This is just the base recipe for the simple vanilla meringue so get creative. I will be creating variations of this recipe so stay tuned.

Step preview

  1. Pre-heat oven - 150°C
  2. Prepare 2 clean baking sheets with parchment paper
  3. Add egg white and salt to a clean large mixing bowl
  4. Mix thoroughly until stiff and glossy and continue mixing
  5. Add granulated sugar to the batter gradually and continue mixing
  6. Mix thoroughly until stiff then set aside
  7. Add cornstarch, water, white vinegar and vanilla extract to a clean small bowl
  8. Mix thoroughly with teaspoon until completely mixed and continue
  9. Transfer mixture to batter
  10. Fold gently until mixture comes together and continue
  11. Transfer batter to 2 baking sheets
  12. Bake until light golden - 40 min, 150°C
  13. Let cool completely - approx 30 min
  14. Transfer meringue to plastic container carefully
