  • Heavy cream icon

    Method

  • 1. Add heavy cream and honey to a clean small bowl then set aside
  • 2. Add bread flour and water to a clean saucepan and mix
  • 3. Heat until thickened while whisking - approx 5 min, low heat
  • 4. Transfer cream to mixture and mix
  • 5. Add bread flour, active dried yeast, powdered milk and kosher salt to a clean stand mixer bowl and mix
  • 6. Add egg to the dough
  • 7. Transfer mixture to dough
  • 8. Knead until smooth - approx 5 min, medium speed
  • 9. Add unsalted butter to a clean small bowl then set aside
  • 10. Transfer butter to dough bit by bit while mixing
  • 11. Grease a clean large mixing bowl
  • 12. Transfer dough to large mixing bowl and cover
  • 13. Let rise until doubled - 1 hr
  • 14. Turn out on lightly-floured surface
  • 15. Shape and cover
  • 16. Let rise - 45 min
  • 17. Pre-heat oven - 190°C
  • 18. Bake until golden brown - 15 min, 190°C
