A lovely old-fashioned oatmeal raisin cookie, just like grandmother used to make!

    Method

  • 1. Line 2 clean baking sheets with parchment paper
  • 2. Add rolled oats, all purpose flour, wheat germ, baking soda, baking powder, ground cinnamon and salt to a clean large mixing bowl
  • 3. Whisk briefly until blended
  • 4. Add unsalted butter, light brown sugar and granulated sugar to a clean stand mixer bowl
  • 5. Cream butter and sugar for about 2 minutes
  • 6. Add egg to the dough one by one while mixing
  • 7. Add vanilla extract to the dough
  • 8. Transfer dry ingredients to the mixer bowl and mix until combined
  • 9. Add raisins
  • 10. Mix until mixture comes together
  • 11. Chill in fridge - 20 min
  • 12. Pre-heat oven - 175°C
  • 13. Scoop dough onto 2 baking sheets
  • 14. Press lightly
  • 15. Bake until browned at edges - 12 min, 175°C
  • 16. Let cool - approx 5 min
  • 17. Transfer onto cooling rack
