    Method

  • 1. Add coriander seeds, cumin seeds and anise seeds to a clean small bowl
  • 2. Grind with mortar and pestle until fine
  • 3. Add ground cinnamon, cayenne pepper and ground turmeric to the spices
  • 4. Add ground lamb, harissa and salt to a clean stand mixer bowl
  • 5. Transfer one quarter of spices to stand mixer bowl
  • 6. Mix until well combined
  • 7. Season to taste
  • 8. Chill in fridge - approx 1 hr
  • 9. Form into rounds
  • 10. Fry in frying pan until golden brown
