This spicy lamb sausage has a blend of warm spices, and packs a fiery kick from the harissa, a paste made of roasted chiles and garlic. Shape it into patties or balls for frying or grilling and serve with flatbreads, or freeze in portions for later.

Step preview

  1. Add coriander seeds, cumin seeds and anise seeds to a clean small bowl
  2. Grind with mortar and pestle until fine
  3. Add ground cinnamon, cayenne pepper and ground turmeric to the spices
  4. Add ground lamb, harissa and salt to a clean stand mixer bowl
  5. Transfer one quarter of spices to stand mixer bowl
  6. Mix until well combined
  7. Season to taste
  8. Chill in fridge - approx 1 hr
  9. Form into rounds
  10. Fry in frying pan until golden brown
