A quick, easy, and colorful alternative to hummus, this spread/dip is great on toast, flatbreads, or with seasonal vegetables. You can use fresh peas if you have them, and frozen ones work just fine too. Served here on toast, topped with sliced baby radishes and sprouts.

Step preview

  1. Add garlic clove and peas to a clean medium bowl then set aside
  2. Heat a clean frying pan
  3. Add olive oil and shallot to the frying pan
  4. Cook until softened - approx 2 min
  5. Transfer vegetables to frying pan
  6. Cook until tender - approx 2 min
  7. Get a clean large mixing bowl
  8. Transfer content of frying pan to large mixing bowl
  9. Add olive oil, lemon, black pepper, sea salt and mint to the vegetables
  10. Blend until smooth
  11. Season to taste
