Step preview

  1. Line 2 clean baking sheets with parchment paper
  2. Add all purpose flour, cocoa powder and baking soda to a clean medium bowl
  3. Whisk briefly until blended
  4. Add unsalted butter to a clean large mixing bowl
  5. Beat until creamy - paddle attachment
  6. Add granulated sugar, light brown sugar, sea salt and vanilla extract to the large mixing bowl
  7. Beat - 2 min, medium speed
  8. Transfer dry ingredients to dough
  9. Mix until just combined - low speed
  10. Add bittersweet chocolate to a clean small bowl
  11. Mix chocolate mixture into dough
  12. Turn out on lightly-floured surface
  13. Divide into halves
  14. Shape
  15. Wrap with plastic wrap
  16. Chill in fridge - 3 hr
  17. Pre-heat - 160°C
  18. Cut into rounds
  19. Transfer dough to 2 baking sheets
  20. Bake - 12 min, 160°C, middle rack
  21. Transfer onto cooling rack
