  20. Get a clean medium bowl
  21. Add peeled, cubed potato
  22. Transfer vegetables to saucepan
  23. Cover medium bowl to simmer - 7 min
  24. Get a clean large mixing bowl
  25. Add coarsely chopped spinach
  26. Transfer vegetables to saucepan
  27. Cook - 3 min
  28. Add salt
  29. Transfer content of saucepan to large serving bowl
  30. Garnish with finely chopped cilantro
