Step preview

  1. Place rack of lamb on a clean work surface
  2. French the rack of lamb
  3. Skewer lamb on the Vortex rotisserie spit
  4. Season with kosher salt and black pepper
  5. Insert the Vortex drip pan
  6. AIRFRY - 12 min, 190°C
  7. When display reads "Add Food", insert rotisserie spit
  8. Press "ROTATE"
  9. Add pistachios, panko breadcrumbs, fresh thyme and fresh rosemary to a clean small bowl
  10. Drizzle with butter
  11. Toss until just combined
  12. Brush with dijon mustard
  13. When AirFry program is complete, remove the rack of lamb
  14. Press pistachio mixture into lamb
  15. Transfer lamb to Vortex cooking tray
  16. AIRFRY - 7 min, 190°C
  17. When display reads "Add Food", insert cooking tray in center position
  18. When display reads "Turn Food", do nothing
  19. Ensure thickest part of the lamb has an internal temperature of at least 140℉/60℃
  20. Slice into individual chops
  21. Serve
