Typically, pizza for breakfast would not be a healthy choice, but each serving of this entrée meets one third of your daily protein requirement. The basil and tomatoes in this dish also add a nice zest, so you start your day on a fresh note. I like to sprinkle crushed red pepper on top of the finished pie to provide some extra kick.

Step preview

  1. Place a clean rack in the inner pot
  2. Add water to the inner pot
  3. Add egg, salted butter, ground chicken, parmesan cheese and almond flour to a clean large mixing bowl
  4. Mix thoroughly
  5. Grease a clean round pan
  6. Transfer mixture to round pan
  7. Place round pan on the rack
  8. Cover loosely with foil
  9. Close and lock the lid and turn the steam release handle to Sealing
  10. Pressure cook - Manual, High, 10 min
  11. Cancel - Keep warm
  12. Mix dried basil, chili flakes, dried oregano and dried cilantro into a clean small bowl then set aside
  13. Quick release
  14. Add fire-roasted diced tomatoes to the round pan
  15. Top with mozzarella cheese and spinach
  16. Sprinkle herb mixture on top of the pizza
  17. Cover loosely with foil
  18. Close and lock the lid and turn the steam release handle to Sealing
  19. Pressure cook - Manual, High, 10 min
  20. Natural release - 10 min
  21. Quick release
  22. Serve
