This simple curry makes a fast weeknight dinner and is a great way to use up any veggies you might have on hand. Because it cooks so quickly, there isn’t enough time to cook rice or quinoa in the same pot, but you could easily cook any grain you’d like on the stove before starting the curry, or make Easy Cauliflower “Rice” ahead of time for a grain-free alternative.

Step preview

  1. Add extra virgin olive oil to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Add curry powder, yellow onion and ground ginger to the inner pot
  4. Cook until fragrant - approx 1 min
  5. Cancel - Sauté
  6. Then add water to the inner pot
  7. Add carrot, red lentils, sweet potato and sea salt to the inner pot
  8. Stir until completely mixed
  9. Close and lock the lid and turn the steam release handle to Sealing
  10. Pressure cook - Manual, High, 1 min
  11. Natural release - 3 min
  12. Quick release
  13. Add coconut milk and kale to the inner pot
  14. Mix until wilted - 2 min
  15. Season with salt & pepper to taste
  16. Add maple syrup to the inner pot
  17. Transfer content of inner pot to large serving bowl
  18. Serve with cooked rice and cilantro
