Salmon is an excellent source of protein and omega-3 fatty acids, and it comes to perfection in just minutes in the Instant Pot. Because the broccoli cooks even faster than the fish, you add it at the very end of the cooking process to ensure it doesn’t turn to mush. Whip up this addictive soy-ginger dressing while the pot is coming to pressure for an easy 20-minute meal. Serve any extra dressing over a simple salad on the side.

Step preview

  1. Add water to the inner pot
  2. Place a clean rack in the inner pot
  3. Add salmon filet to the rack skin side down
  4. Season generously with salt & pepper
  5. Close and lock the lid and turn the steam release handle to Sealing
  6. Pressure cook - Manual, High, 0 min
  7. Cancel - Keep warm
  8. Quick release
  9. Add toasted sesame oil, extra virgin olive oil, ginger, soy sauce, garlic clove, maple syrup and apple cider vinegar to a clean blender jug
  10. Blend until smooth then set aside - 1 min
  11. Add broccoli to the inner pot
  12. Close and lock the lid and turn the steam release handle to Sealing
  13. Pressure cook - Manual, High, 0 min
  14. Cancel - Keep warm
  15. Quick release
  16. Transfer vegetables to 4 serving plates
  17. Transfer fish to 4 serving plates
  18. Garnish with sesame seeds and green onion
