This giant pancake is surprisingly low in carbs compared to traditional pancakes. It has the texture of a thick crepe, is lightly sweet, and is topped with a drizzle of melted butter and a dollop of sugar-free jam. Use a jam that is labeled sugar-free, no-sugar-added, or stevia-sweetened, and look for varieties such as mixed berry, strawberry, blueberry, raspberry, or blackberry.

Step preview

  1. Add egg, unsweetened almond milk, lemon juice and vanilla extract to a clean large mixing bowl
  2. Whisk then set aside
  3. Add baking powder, sea salt, erythritol and oligosaccharide blend granular sweetener and almond flour to a clean medium bowl
  4. Mix until combined
  5. Transfer wet ingredients to dry ingredients
  6. Whisk until smooth
  7. Add butter to the inner pot
  8. Transfer batter to inner pot
  9. Close and lock the lid and turn the steam release handle to Venting
  10. Cook - Slow cook, More, 1 hr 30 min
  11. Transfer pancake to serving plate
  12. Divide into pieces
  13. Drizzle with butter and no-sugar-added berry jam
  14. Serve
