Step preview

  1. Add beef bottom round roast and beef broth to the inner pot
  2. Close and lock the lid and turn the steam release handle to Sealing
  3. Pressure cook - Meat, High, 1 hr 30 min
  4. Quick release
  5. Shred beef amd return it to the inner pot
  6. Add tomato paste, brown sugar, molasses, salt, chili powder, apple cider vinegar and whiskey to a clean saucepan
  7. Add some cooking liquid to a small saucepan
  8. Simmer until thickened - 25 min
  9. Transfer sauce to beef
  10. Mix until well combined
  11. Add dijon mustard, granny smith apple, carrot, brown sugar and apple cider vinegar to a clean large mixing bowl
  12. Mix until well combined
  13. Season with salt & pepper to taste
  14. Serve beef with the slaw.
