Step preview

  1. Add whipping cream to a clean saucepan
  2. Heat until simmering - medium heat
  3. Remove
  4. Add bittersweet chocolate to the saucepan
  5. Stir until smooth
  6. Add egg yolk, brown sugar, unsweetened cocoa powder, vanilla extract and salt to a clean large mixing bowl
  7. Whisk until well blended
  8. Pour content of saucepan into large mixing bowl slowly while whisking
  9. Strain content of large mixing bowl into round pan
  10. Cover tightly with foil
  11. Add water to the inner pot
  12. Place a clean rack in the inner pot
  13. Place round pan on the rack
  14. Close and lock the lid and turn the steam release handle to Sealing
  15. Pressure cook - Manual, Low, 2 hr 20 min
  16. Natural release - 5 min
  17. Quick release
  18. Remove
  19. Uncover
  20. Let cool until room temperature and cover
  21. Refrigerate in fridge - 3 hr
