Eating a keto diet doesn’t have to mean missing out on chili. Beans aren’t even necessary to make this chili hearty and comforting. The flavor is packed into the broth, meat, and veggies that give it that classic chili taste without the carbs. This version packs a subtle punch of heat after the initial burst of flavor. Top with your favorite chili add-ins. For a crunch, try crushed pork rinds on top!

Step preview

  1. Heat - Sauté, Normal
  2. Add bacon to the inner pot
  3. Cook, remove, crumble and set aside, leaving bacon grease in the inner pot
  4. Add ground beef and ground pork to the inner pot
  5. Brown until cooked through
  6. Add onion and green bell pepper to the inner pot
  7. Cook until softened - 1 min
  8. Cancel - Sauté
  9. Then add chili powder, cayenne pepper, tomato paste, canned diced tomatoes, salt, beef broth and black pepper to the inner pot
  10. Close and lock the lid and turn the steam release handle to Sealing
  11. Pressure cook - Soup, High, 30 min
  12. Natural release - 10 min
  13. Quick release
  14. Stir in cooked bacon
  15. Add xanthan gum to the inner pot
  16. Heat until thickened while stirring frequently
  17. Serve warm with favorite chili toppings
