One of the cool, less well known features of the Instant Pot is that it can be used to heat up leftovers, which is great for people who prefer not to microwave food. The results from the Instant Pot are better, too! The food retains its moisture and heats evenly. There are several options for reheating pulled pork, but these two are my preferred.

Step preview

  1. Add lard to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Then add red bell pepper, green bell pepper and onion to the inner pot
  4. Sauté while stirring frequently - 2 min
  5. Add garlic clove, ground cumin and kosher salt to the inner pot
  6. Stir well until combined
  7. Cancel - Sauté
  8. Then stir pulled pork into the inner pot
  9. Close and lock the lid and turn the steam release handle to Sealing
  10. Pressure cook - Manual, High, 1 min
  11. Divide lettuce and green cabbage between the clean serving plates
  12. Quick release
  13. Divide pork between 4 serving plates
  14. Top with guacamole
  15. Garnish with tomato salsa, sour cream and cilantro
