Step preview

  1. Add arborio rice, water, coconut oil and salt to the inner pot
  2. Close and lock the lid and turn the steam release handle to Sealing
  3. Pressure cook - Manual, High, 3 min
  4. Natural release - 10 min
  5. Quick release
  6. Add coconut milk and sugar to the inner pot
  7. Stir until combined
  8. Whisk egg, vanilla extract and milk into a clean small bowl
  9. Pour content of small bowl into inner pot
  10. Cancel - Keep warm
  11. Pre-heat - Sauté, Normal
  12. Cook until just boiling while stirring frequently
  13. Cancel - Sauté
  14. Stir canned pineapple into the inner pot
  15. Transfer content of inner pot to 8 small bowls
  16. Chill in fridge
  17. Serve
