Step preview

  1. Add arborio rice, water, coconut oil and salt to the inner pot
  2. Close and lock the lid and turn the steam release handle to Sealing
  3. Pressure cook - Manual, High, 3 min
  4. Natural release - 10 min
  5. Release pressure -
  6. Add coconut milk and sugar to the inner pot
  7. Stir until combined
  8. Whisk egg, vanilla extract and milk into a clean small bowl
  9. Pour content of small bowl into inner pot
  10. Pre-heat - Sauté, Normal
  11. Cook until just boiling while stirring frequently
  12. Stir canned pineapple into the inner pot
  13. Transfer content of inner pot to 8 small bowls
  14. Chill in fridge
  15. Serve
