Orecchio means “ear” in Italian, a nod to the concave shape of this round pasta. Orecchiette serve as perfect little catcher’s mitts for this easy, zesty sauce of garlic, anchovies, and peppery broccoli rabe (also known as broccoli raab or rapini). If you’re not a fan of the bitterness of rabe, substitute broccolini or broccoli. Crème fraîche is stirred into the pasta at the end of cooking to make a tantalizingly creamy sauce with just the right tang. Step preview

  1. Add olive oil to the inner pot
  2. Heat until hot - Sauté, Normal
  3. Then add anchovies, shallot and garlic clove to the inner pot
  4. Cook until fragrant while stirring occasionally - approx 3 min
  5. Stir chicken broth, chili flakes, water, salt, orecchiette pasta and black pepper into the inner pot
  6. Add tenderstem broccoli to the inner pot
  7. Close and lock the lid and turn the steam release handle to Sealing
  8. Pressure cook - Manual, Low, 5 min
  9. Release pressure -
  10. Then stir pecorino cheese and crème fraîche into the inner pot
  11. Season with salt & pepper to taste
  12. Transfer content of inner pot to large serving bowl
  13. Let rest until thickened - 5 min
  14. Serve
