Step preview

  1. Add ground pork, onion, egg, almond flour, black pepper, sea salt, liquid aminos, bacon, garlic clove and tomato paste to a clean large mixing bowl
  2. Mix
  3. Form into balls
  4. Add avocado oil to the inner pot
  5. Pre-heat until hot - Sauté, Normal
  6. Transfer half of meatballs to inner pot
  7. Cook and turn half way through - 4 min
  8. Transfer cooked meatballs to plate
  9. Transfer the rest of meatballs to inner pot
  10. Cook and turn half way through - 4 min
  11. Transfer meatballs to plate
  12. Add water to the inner pot
  13. Deglaze with a wooden spoon
  14. Return meatballs to inner pot
  15. Cancel - Sauté
  16. Close and lock the lid and turn the steam release handle to Sealing
  17. Pressure cook - Manual, High, 7 min
  18. Add xanthan gum and salted butter to a clean small bowl
  19. Mix with tablespoon until well combined
  20. Cancel - Keep warm
  21. Quick release
  22. Remove the meatballs and set aside.
  23. Heat - Sauté, Normal
  24. Whisk slurry into inner pot
  25. Whisk heavy cream, sea salt and black pepper into the inner pot
  26. Heat while whisking - 2 min
  27. Add the meatballs along with any drippings into the sauce and stir around to coat
  28. Serve
