Step preview

  1. Add chicken breast to a clean cutting board
  2. Pat dry with paper towels
  3. Season with pink himalayan salt and black pepper
  4. Add butter to the inner pot
  5. Heat until hot - Sauté, Normal
  6. Brown chicken on both sides and transfer to a plate
  7. Add dry white wine to the inner pot
  8. Deglaze with a wooden spoon
  9. Stir crimini mushrooms and leek into the inner pot
  10. Top the leeks and mushrooms with the chicken breasts and juices from plate
  11. Cancel - Sauté
  12. Close and lock the lid and turn the steam release handle to Sealing
  13. Pressure cook - Manual, High, 8 min
  14. Natural release - 4 min
  15. Quick release
  16. Cancel - Keep warm
  17. Transfer chicken to a plate
  18. Add arrowroot powder and unsweetened almond milk to a clean small bowl and mix
  19. Heat - Sauté, Normal
  20. Transfer mixture to inner pot
  21. Sauté until thickened while stirring occasionally - 2 min
  22. Serve chicken on top of leeks and mushrooms. Enjoy!
