Step preview

  1. Add chicken breast to a clean cutting board
  2. Pat dry with paper towels
  3. Season with pink himalayan salt and black pepper
  4. Add butter to the inner pot
  5. Heat until hot - Sauté, Normal
  6. Brown chicken on both sides and transfer to a plate
  7. Add dry white wine to the inner pot
  8. Deglaze with a wooden spoon
  9. Stir crimini mushrooms and leek into the inner pot
  10. Top the leeks and mushrooms with the chicken breasts and juices from plate
  11. Close and lock the lid and turn the steam release handle to Sealing
  12. Pressure cook - Manual, High, 8 min
  13. Natural release - 4 min
  14. Release pressure -
  15. Transfer chicken to a plate
  16. Add arrowroot powder and unsweetened almond milk to a clean small bowl and mix
  17. Heat - Sauté, Normal
  18. Transfer mixture to inner pot
  19. Sauté until thickened while stirring occasionally - 2 min
  20. Serve chicken on top of leeks and mushrooms. Enjoy!
