Step preview

  1. Add vegetable oil to the inner pot
  2. Heat until hot - Sauté, Normal
  3. Then add onion to the inner pot
  4. Cook until softened while stirring occasionally - 3 min
  5. Add jalapeño pepper, garlic clove, chili powder, salt, ground cumin, dried oregano, black pepper and red pepper flakes to the inner pot
  6. Cook while stirring frequently - 30 sec
  7. Stir chicken broth into the inner pot
  8. Add chicken thighs, hominy and pinto beans to the inner pot
  9. Cancel - Sauté
  10. Close and lock the lid and turn the steam release handle to Sealing
  11. Pressure cook - Manual, High, 6 min
  12. Cancel - Keep warm
  13. Natural release - 10 min
  14. Quick release
  15. Add all purpose flour to a clean small bowl
  16. Stir in 3 tablespoons cooking liquid until smooth
  17. Heat - Sauté, Normal
  18. Transfer flour mixture to inner pot
  19. Cook until thickened while stirring occasionally - approx 5 min
  20. Garnish with cilantro
