Step preview

  1. Add vegetable oil to a clean large cast iron skillet
  2. Heat - medium-high heat
  3. Add beef shoulder roast to the large cast iron skillet
  4. Sauté until lightly browned
  5. Transfer beef to inner pot
  6. Mix onion, beef stock and fresh garlic into the inner pot
  7. Close and lock the lid and turn the steam release handle to Sealing
  8. Pressure cook - Meat, 1 hr 30 min
  9. Cancel - Keep warm
  10. Quick release
  11. Skim fat from cooking liquid, if necessary and reserve 1 cup onion mixture.
  12. Shred beef with 2 forks. Combine shredded beef and reserved onion mixture.
  13. Season with salt & pepper
  14. Heat the sauce of your choice and mix it in to the beef
  15. Serve with garnish/toppings of your choice
