These brownies are lower in sugar and fat than traditional brownies, but they still taste decadent enough to satisfy a sweet tooth. Baking in the Instant Pot keeps the brownies moist, with no risk of overbaking. Don’t be alarmed by the thickness of the batter, or by how soft the brownies might look immediately after cooking. They firm up as they cool, with a perfectly fudgy texture. I like to splurge and use dark chocolate chips for added texture in these naturally sweetened brownies, but you can leave them out completely to avoid the refined sugar.

Step preview

  1. Line a clean springform pan with parchment paper
  2. Add almond butter, coconut sugar, raw cacao powder, egg, sea salt, vanilla extract and baking soda to a clean large mixing bowl
  3. Mix until well combined
  4. Transfer batter to springform pan
  5. Spread evenly
  6. Sprinkle with dark chocolate chips
  7. Place a clean rack in the inner pot
  8. Add water to the inner pot
  9. Place the pan on the rack
  10. Close and lock the lid and turn the steam release handle to Sealing
  11. Pressure cook - Manual, High, 15 min
  12. Natural release
  13. Remove pan from the inner pot
  14. Let cool on round wire rack
  15. Store in fridge
