Flan can be tricky to make in a conventional oven, but the Instant Pot cooks it perfectly—and fast. My recipe contains a bit of cream cheese for extra smoothness and richness, and it makes its own sauce as it sits in the refrigerator. I like the drama of serving one large flan on a platter, surrounded by fresh berries.

Step preview

  1. Grease a clean round pan
  2. Add sugar to a clean saucepan
  3. Cook until golden brown while stirring occasionally - 4 min, medium-low heat
  4. Transfer caramel to round pan
  5. Add egg, condensed milk, evaporated milk, vanilla extract, cream cheese and kosher salt to a clean blender jug
  6. Blend until smooth
  7. Let rest - 5 min
  8. Using a spoon, skim off and discard any foam on the surface.
  9. Transfer content of blender jug to round pan
  10. Cover with foil
  11. Add water to the inner pot
  12. Place the pan on a rack and carefully lower both into the inner pot
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Pressure cook - Manual, High, 15 min
  15. Release pressure -
  16. Remove the pan from the inner pot
  17. Carefully remove the foil from the pan
  18. Serve
