There is something so comforting about a bowl of creamy tomato soup, and this buttery, nuanced version is easy to make from scratch. Substitute a can of fire-roasted tomatoes for 1 can of the diced tomatoes. Do not be tempted to add the tomatoes first or to stir the ingredients. Tomatoes can scorch on the bottom of the cooker if added first.

Step preview

  1. Add fresh basil, granulated sugar, chicken broth and diced tomatoes with garlic and onion to the inner pot
  2. Close and lock the lid and turn the steam release handle to Sealing
  3. Pressure cook - Manual, High, 5 min
  4. Cancel - Keep warm
  5. Natural release - 5 min
  6. Quick release
  7. Blend with stick blender until smooth
  8. Stir butter and half and half into the inner pot
  9. Stir frequently until heated through
  10. Season with black pepper to taste
  11. Serve
