Hot, spicy, and satisfying, this streamlined version of the classic Sichuan dish will take the chill off any evening. It’s traditionally made with fresh noodles; but by cooking dried spaghetti right in the sauce, the flavors meld into some cross between a pasta casserole and a Chinese classic. Have lots of beer on hand!

Step preview

  1. Add peanut oil to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Add lean ground pork to the inner pot
  4. Cook, stirring often and breaking up any clumps, until gray but not browned - approx 4 min
  5. Add scallion, sambal oelek, garlic clove and ginger to the inner pot
  6. Cook until aromatic, just a few seconds
  7. Add tahini, soy sauce, balsamic vinegar, honey, dry sherry and worcestershire sauce to the inner pot
  8. Stir well until the tahini is uniform in the mixture
  9. Add chicken broth to the inner pot
  10. Cancel - Sauté
  11. Then add spaghetti to the inner pot
  12. Submerge the noodles in the sauce without their touching the bottom of the inner pot
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Pressure cook - Manual, High, 6 min
  15. Quick release
  16. Stir well
