Colcannon is a traditional Irish recipe made with mashed potatoes and kale or cabbage. This classic Irish comfort food is the perfect side dish for Paddy's Day. Creamy, buttery mashed potatoes are stirred through with silky leeks and cabbage, and topped with crispy bacon. To serve, make a slight depression in the center and add a knob of Irish butter.

Step preview

  1. Pre-heat until hot - Sauté, Normal
  2. Add bacon to the inner pot
  3. Cook until crispy
  4. Line a clean plate with paper towels
  5. Remove bacon to paper-towel lined plate
  6. Add russet potato, leek, water, salt and black pepper to the inner pot
  7. Mix well
  8. Close and lock the lid and turn the steam release handle to Sealing
  9. Pressure cook - Manual, High, 5 min
  10. Cancel - Keep warm
  11. Quick release
  12. Heat - Sauté, Normal
  13. Then add milk and butter to the inner pot
  14. Cook and stir 1 minute, mashing potatoes until still slightly chunky
  15. Add milk and savoy cabbage to the inner pot
  16. Cook until wilted - approx 2 min 30 sec
  17. Stir in bacon
