Chicken Cacciatore is traditionally a slow-cooked dish that's made much quicker in an Instant Pot! Garlic, onions, tomatoes and olives come together in a rustic tomato sauce, resulting in a juicy chicken dish that's full of flavor.

Step preview

  1. Pre-heat - Sauté, More
  2. Add chicken breast, all purpose flour, salt, black pepper and italian herbs to a clean medium bowl
  3. Toss until coated
  4. Add olive oil to the inner pot
  5. Heat - 20 sec
  6. Add chicken to inner pot
  7. Cook until lightly browned - approx 6 min
  8. Transfer content of inner pot to plate
  9. Add olive oil, carrot and celery stalk to the inner pot
  10. Cook - 2 min
  11. Add garlic clove to the inner pot
  12. Cook - 30 sec
  13. Add balsamic vinegar to the inner pot
  14. Stir well
  15. Cancel - Sauté
  16. Return chicken to inner pot
  17. Pour water and canned diced tomatoes into the inner pot
  18. Add black olives to the inner pot
  19. Close and lock the lid and turn the steam release handle to Sealing
  20. Pressure cook - Meat, High, 10 min
  21. Quick release
  22. Add sprouted whole-grain bread to a clean plate
  23. Serve
