Tender pieces of cauliflower braised in a simple tomato-chipotle sauce can be served as a meatless filling for tacos, tostadas, burritos, or even enchiladas, but it also makes for a delicious side dish loaded with spicy flavor. For a quick and easy meatless meal, serve it atop warm corn tortillas and garnish with pickled onions and chopped cilantro.

Step preview

  1. Add roma tomato, chipotle peppers in adobo sauce and water to a clean blender jug
  2. Purée until smooth
  3. Add vegetable oil to the inner pot
  4. Pre-heat until hot - Sauté, More
  5. Then add onion and garlic clove to the inner pot
  6. Sauté until translucent - approx 2 min
  7. Stir cauliflower into the inner pot
  8. Stir tomato mixture into inner pot
  9. Season with coarse salt and black pepper
  10. Close and lock the lid and turn the steam release handle to Sealing
  11. Pressure cook - Manual, High, 10 min
  12. Release pressure -
  13. Add corn tortilla to a clean serving plate
  14. Spoon content of inner pot into serving plate
  15. Garnish with pickled red onions and cilantro
