Step preview

  1. Add extra virgin olive oil to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Add onion and red bell pepper to the inner pot
  4. Cook until softened - approx 3 min
  5. Stir salt and ground cumin into the inner pot
  6. Add fresh salsa, quinoa and water to the inner pot
  7. Close and lock the lid and turn the steam release handle to Sealing
  8. Pressure cook - Rice
  9. Natural release
  10. Fluff with a fork
  11. Stir canned black beans into the inner pot
  12. Transfer quinoa and beans to bowls
  13. Serve with lettuce, avocado, lime, green onion and cilantro
