Instead of heavy cream, this crème brulee features whole milk and coconut milk to create a lighter, velvety-sweet version of one of my all-time favorite obsessions.

Step preview

  1. Place a clean rack in the inner pot
  2. Add water to the inner pot
  3. Add whole milk and cornstarch to a clean small bowl
  4. Stir with tablespoon until dissolved
  5. Add egg yolk and granulated sugar to a clean medium bowl
  6. Whisk until well combined
  7. Whisk slurry into medium bowl
  8. Whisk coconut milk and vanilla extract into the medium bowl
  9. Strain with sieve
  10. Transfer mixture to 6 ramekins
  11. Cover with foil
  12. Place 3 ramekins on the steam rack.
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Pressure cook - Manual, High, 8 min
  15. Natural release - 5 min
  16. Release pressure -
  17. Open the lid. Using tongs, remove the ramekins from pot, remove the foil, and set aside to cool.
  18. Let cool
  19. Repeat with the remaining ramekins.
  20. Cover with plastic wrap
  21. Chill in fridge - approx 4 hr
  22. Pre-heat broiler - high heat
  23. Sprinkle with sugar
  24. Broil in broiler until caramelized - approx 2 min
  25. Let cool slightly on round wire rack
  26. Garnish with mixed berries
  27. Serve
