A wildly popular dish at Chipotle restaurants, cilantro-lime rice is easy to make at home, and with an Instant Pot®, it’s as quick as it is tasty. If you don’t have fresh cilantro, look for cilantro paste in the produce or frozen section of your supermarket.

Step preview

  1. Pre-heat - Sauté, Normal
  2. Add olive oil to the inner pot
  3. Heat until shimmering
  4. Add long grain rice and garlic clove to the inner pot
  5. Cook until fragrant while stirring frequently - approx 1 min
  6. Add low sodium chicken stock and sea salt to the inner pot
  7. Close and lock the lid and turn the steam release handle to Sealing
  8. Pressure cook - Manual, High, 7 min
  9. Release pressure -
  10. Add cilantro, lime zest and lime juice to the inner pot
  11. Stir gently until just combined
  12. Cover
  13. Let rest - approx 4 min
  14. Fluff with a fork
