This vegetable side dish is a nice jolt of color in the winter, and one that gets to the table quickly thanks to the Instant Pot. I like to serve it with roast chicken or pork.

Step preview

  1. Pre-heat - Sauté, More
  2. Add vegetable oil to the inner pot
  3. Heat until shimmering - approx 1 min
  4. Add mustard seeds, onion, ground cumin and kosher salt to the inner pot
  5. Cook while stirring occasionally - 7 min
  6. Stir serrano pepper and garlic into the inner pot
  7. Cook until fragrant - approx 1 min
  8. Stir water, Acorn Squash and broccoli into the inner pot
  9. Cancel - Sauté
  10. Close and lock the lid and turn the steam release handle to Sealing
  11. Pressure cook - Manual, High, 2 min
  12. Quick release
  13. Stir
  14. Serve
