Step preview

  1. Add winter shoots to a clean small bowl
  2. Soak with water - 8 hr
  3. Rinse with water
  4. Drain well
  5. Add pork spare ribs to a clean cutting board
  6. Remove membraine from ribs
  7. Cut between bones into small pieces
  8. Add olive oil to the inner pot
  9. Heat until hot - Sauté, More
  10. Then add ginger, green onion, garlic clove and star anise pod to the inner pot
  11. Sauté - approx 1 min
  12. Transfer ribs to inner pot
  13. Cook until lightly browned - approx 4 min
  14. Transfer content of small bowl to inner pot
  15. Sauté - approx 2 min
  16. Add cooking wine, dark soy sauce, light soy sauce, salt, sugar and water to the inner pot
  17. Cook until just boiling
  18. Close and lock the lid and turn the steam release handle to Sealing
  19. Pressure cook - Manual, High, 36 min
  20. Natural release - 5 min
  21. Release pressure -
  22. Heat - Sauté, More
  23. Cook until reduced while stirring occasionally
  24. Serve
