Although cooking beef short ribs in the Instant Pot cuts down on the time they need to braise, we haven’t shaved any time off any of the other steps in this fairly traditional recipe, even using a classic beurre manié (French, burh mahn-YAY, a butter and flour mixture) to thicken the sauce into silky richness. The meat will be so tender that you’ll barely need knives at the table, so the short ribs are best served in bowls.

Step preview

  1. Add butter to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Add bacon to the inner pot
  4. Fry until crispy while stirring occasionally - approx 4 min
  5. Transfer bacon to large mixing bowl
  6. Add beef short ribs to the inner pot
  7. Brown well while stirring occasionally - approx 10 min
  8. Transfer ribs to large mixing bowl
  9. Add beef short ribs to the inner pot
  10. Brown well while stirring occasionally - approx 10 min
  11. Transfer content of inner pot to large mixing bowl
  12. Add red onion to the inner pot
  13. Cook until softened while stirring frequently - approx 3 min
  14. Add crimini mushrooms to the inner pot
  15. Cook until almost evaporated while stirring frequently - approx 5 min
  16. Pour red wine into the inner pot
  17. Deglaze with a wooden spoon
  18. Stir beef broth, dried thyme, dried sage, salt, black pepper and bay leaves into the inner pot
  19. Transfer content of large mixing bowl to inner pot
  20. Stir well
  21. Close and lock the lid and turn the steam release handle to Sealing
  22. Pressure cook - Manual, High, 1 hr 30 min
  23. Natural release - 30 min
  24. Discard bay leaves
  25. Transfer ribs, bacon, and vegetables to serving plate
  26. Cover with foil
  27. Heat until simmering - Sauté, Normal
  28. Add butter and all purpose flour to a clean small bowl
  29. Mix until smooth
  30. Transfer flour mixture to inner pot bit by bit while whisking
  31. Cook while stirring frequently - approx 1 min 30 sec
  32. Pour sauce over meat and vegetables
  33. Serve
