When I was first introduced to pressure cookers, risotto was one of the dishes that convinced me to buy one. I was skeptical that decent risotto was even possible without constant stirring, but amazingly, it is! I love the combination of artichokes and spinach in risotto, but try any cooked vegetables you like.

Step preview

  1. Add unsalted butter to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Then add onion to the inner pot
  4. Cook until softened while stirring occasionally - approx 3 min
  5. Add arborio rice to the inner pot
  6. Stir until coated
  7. Cook - approx 1 min
  8. Stir artichoke hearts into the inner pot
  9. Add white wine to the inner pot
  10. Cook until almost evaporated while stirring occasionally - approx 3 min
  11. Add low-sodium vegetable stock and kosher salt to the inner pot
  12. Stir until combined
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Pressure cook - Manual, High, 8 min
  15. Quick release
  16. Add low-sodium vegetable stock to the inner pot
  17. Stir baby spinach into the inner pot
  18. Simmer until wilted while stirring occasionally - approx 3 min
  19. Stir unsalted butter and parmesan cheese into the inner pot
  20. Season to taste
  21. Serve
