Instant Pot Lightened-Up Shrimp and Grits

Traditional shrimp and grits is loaded with fat, but this version cuts the fat and calories, and uses the flavor of sweet, earthy smoked paprika to replace fatty bacon.

Step preview

  1. Pre-heat - Sauté, Normal
  2. Add olive oil and unsalted butter to the inner pot
  3. Add large shrimp and garlic clove to the inner pot
  4. Sauté - 2 min
  5. Add red bell pepper to the inner pot
  6. Season with smoked paprika, kosher salt, fresh thyme, red pepper flakes and lemon
  7. Sauté - approx 5 min
  8. Cancel - Sauté
  9. Transfer content of inner pot to large mixing bowl
  10. Cover with foil then set aside
  11. Add grits and unsalted butter to the inner pot
  12. Stir water into the inner pot slowly and cover
  13. Close and lock the lid and turn the steam release handle to Sealing
  14. Pressure cook - Manual, High, 10 min
  15. Natural release - 10 min
  16. Quick release
  17. Add sharp white cheddar cheese to the inner pot
  18. Stir until melted
  19. Transfer content of inner pot to 4 large serving bowls
  20. Transfer shrimp to 4 large serving bowls
  21. Garnish with scallion
  22. Serve
