When I was a kid, coconut was the gateway for me to try just about any Indian dish, and I firmly believe that rule applies to adults, too. This recipe is perfect for people who are afraid to try Indian food; it’s gently spiced, creamy and impossible not to love. I serve it over rice so I can soak up every bit of the sauce.

Step preview

  1. Pre-heat until hot - Sauté, More
  2. Add coconut oil to the inner pot
  3. Heat until shimmering - approx 1 min
  4. Add onion to the inner pot
  5. Cook until softened while stirring occasionally - approx 4 min
  6. Add kosher salt, ground cumin, ground turmeric and kashmiri chili powder to the inner pot
  7. Cook until fragrant - approx 1 min
  8. Add ginger, garlic clove, curry leaves and green Thai chile to the inner pot
  9. Cook until fragrant - approx 2 min
  10. Stir water into the inner pot
  11. Stir pork shoulder and coconut milk into the inner pot
  12. Close and lock the lid and turn the steam release handle to Sealing
  13. Pressure cook - Manual, High, 30 min
  14. Natural release - 5 min
  15. Release pressure -
  16. Pre-heat - Sauté, Less
  17. Simmer until thickened - approx 3 min
  18. Stir cilantro into the inner pot
  19. Serve
