Step preview

  1. Place chuck roast on a clean work surface
  2. Pat dry with paper towels
  3. Season with salt and black pepper
  4. Pre-heat - Sauté, Normal
  5. Add vegetable oil to the inner pot
  6. Heat until hot
  7. Transfer half of meat to inner pot
  8. Cook until browned
  9. Remove browned meat to plate
  10. Transfer remaining raw meat to inner pot
  11. Cook until browned
  12. Remove meat to plate
  13. Add vegetable oil to the inner pot
  14. Heat until hot
  15. Add onion to the inner pot
  16. Cook until softened while stirring occasionally - approx 3 min
  17. Add red bell pepper to the inner pot
  18. Cook while stirring occasionally - approx 2 min
  19. Add tomato paste, fresh garlic, chipotle chili powder, paprika, ground cumin, dried oregano, salt and black pepper to the inner pot
  20. Cook while stirring occasionally - approx 1 min
  21. Stir water into the inner pot
  22. Return beef to inner pot
  23. Add canned diced tomatoes to the inner pot
  24. Mix well
  25. Cancel - Sauté
  26. Close and lock the lid and turn the steam release handle to Sealing
  27. Pressure cook - Manual, High, 30 min
  28. Natural release - 10 min
  29. Quick release
  30. Serve with cooked rice or tortillas
