We designed this recipe to make a lot of taco filling because 1) that filling is tasty enough for crowds, and 2) it freezes well for quick, microwave meals in the weeks or months ahead. You’ll need two 1-pound packages of ground turkey (rather than one 2-pound package). The blocks of frozen meat need to stand against each other in the cooker. Otherwise, they have a tendency to scorch— or one gets done while the other stays partially frozen. Frozen ground turkey can be difficult to break apart. After cooking, it stays in long, thin strands, about the way it comes out of the grinder. You’ll need to break these into smaller bits for a good taco filling

Step preview

  1. Stir tomato salsa, chicken broth, chili powder, ground cumin, ground cinnamon, white onion, salt and Canned Green Chiles into the inner pot
  2. Add ground turkey to the inner pot
  3. Close and lock the lid and turn the steam release handle to Sealing
  4. Pressure cook - Manual, High, 25 min
  5. Cancel - Keep warm
  6. Quick release
  7. Break up the turkey with a large spoon and meat fork
  8. Pre-heat - Sauté, Normal
  9. Simmer while stirring frequently
  10. Stir yellow cornmeal into the inner pot
  11. Simmer until thickened - approx 3 min
  12. Cancel - Sauté
  13. Set the lid askew over the pot
  14. Set aside until thickened - 5 min
  15. Add flour tortilla, lettuce and cheese to a clean serving plate
  16. Serve in tortillas with shredded lettuce and cheese
