I’d never dream of messing with a Texas staple, so here are two versions of queso, one made with shredded Cheddar and Jack cheeses and one made with American cheese . Fundido means “melted,” and that’s what this is: gooey and hot, to scoop up with chips or tortillas. My tasters liked both versions equally.

Step preview

  1. Add vegetable oil to the inner pot
  2. Pre-heat until hot - Sauté, Normal
  3. Then add ground cumin, garlic clove, serrano pepper, black pepper and white onion to the inner pot
  4. Cook until softened while stirring frequently - approx 1 min
  5. Add vegetable broth and all purpose flour to the inner pot
  6. Stir until well combined
  7. Add cream cheese, mild cheddar, monterey jack cheese and roma tomato to the inner pot
  8. Stir until melted
  9. Close and lock the lid and turn the steam release handle to Sealing
  10. Pressure cook - Manual, High, 1 min
  11. Release pressure -
  12. Whisk until smooth
  13. Serve warm
