Nope, not even a hint of caviar in this. This dish makes an appearance at most summer barbecues in Texas. The dressing doesn’t contain any mayonnaise, which makes it safer for picnics and barbecues where it might be sitting out for hours in the heat. The fresh vegetables lend a nice contrast to the creamy peas, and the tangy vinaigrette finishes it all off rather well.

Step preview

  1. Add water and dried black-eyed peas to the inner pot
  2. Mix
  3. Close and lock the lid and turn the steam release handle to Sealing
  4. Pressure cook - Manual, High, 10 min
  5. Natural release
  6. Drain and let cool
  7. Add extra virgin olive oil, apple cider vinegar, ground cumin, lemon juice, salt and ancho chili powder to a clean large mixing bowl
  8. Whisk together
  9. Add yellow onion, cilantro, jalapeño pepper and roma tomato to the large mixing bowl
  10. Transfer beans to large mixing bowl
  11. Stir gently until combined
  12. Season to taste
  13. Let rest - 1 hr
  14. Serve
