Combining beans and greens is a common—and delicious—Italian dinner tradition. In this dish of cannellini beans flavored with ham, broccoli rabe provides color and a hint of bitterness. If you don’t have broccoli rabe, you can use chard instead. Sauté it briefly before adding it after the beans pressure cook.

Step preview

  1. Add kosher salt and water to a clean large mixing bowl
  2. Stir until dissolved
  3. Add dried cannellini beans to the large mixing bowl
  4. Soak - 24 hr
  5. Drain and rinse
  6. Add extra virgin olive oil to the inner pot
  7. Pre-heat until hot - Sauté, Normal
  8. Heat until shimmering
  9. Add onion and carrot to the inner pot
  10. Sprinkle with kosher salt
  11. Cook, stirring often, until the onion pieces separate and soften.
  12. Add garlic clove to the inner pot
  13. Cook until fragrant - approx 1 min
  14. Add the drained beans to the inner pot
  15. Add kosher salt, cooked ham, low sodium chicken stock and bay leaves to the inner pot
  16. Close and lock the lid and turn the steam release handle to Sealing
  17. Pressure cook - Manual, High, 12 min
  18. Natural release - 10 min
  19. Quick release
  20. Stir tenderstem broccoli into the inner pot
  21. Bring to a simmer to heat it through and thicken the sauce slightly
  22. Taste the beans and adjust the seasoning
  23. Ladle stew into medium bowl
  24. Sprinkle with parmesan cheese and fresh parsley
