Step preview

  1. Place chicken breast on a clean work surface
  2. Pound chicken breasts to 1/4-inch thickness.
  3. Add frozen spinach and feta cheese to a clean medium bowl
  4. Mix
  5. Add salt to the medium bowl
  6. Divide evenly
  7. Spoon mixture into chicken
  8. Close chicken breasts and secure with toothpicks or butcher’s string
  9. Sprinkle with dried oregano, dried parsley, salt, black pepper and garlic powder
  10. Add coconut oil to the inner pot
  11. Pre-heat until hot - Sauté, Normal
  12. Add chicken to inner pot
  13. Sear each side until golden brown
  14. Cancel - Sauté
  15. Transfer chicken to work surface then set aside
  16. Pour water into the inner pot
  17. Scrape bottom to remove any chicken or seasoning that is stuck on.
  18. Place a clean rack in the inner pot
  19. Place chicken on rack
  20. Close and lock the lid and turn the steam release handle to Sealing
  21. Pressure cook - Manual, High, 15 min
  22. Natural release - 15 min
  23. Quick release
  24. Serve immediately
