Stuffed chicken sounds fancy, but it’s really an easy weeknight dinner. The spinach adds powerful nutrients to this meal while balancing out the creamy feta.

  • Chicken breast icon

    4 (about 450 g)butterflied

  • Frozen spinach icon

    ½ cup (about 78 g)

    ¼ teaspoon (about 0.22 g)

    ¼ teaspoon (about 0.54 g)

  • Garlic powder icon

    ¼ teaspoon (about 0.66 g)

  • Coconut oil icon

    METHOD


  • 1. Place chicken breast on a clean work surface
  • 2. Pound chicken breasts to 1/4-inch thickness.
  • 3. Add frozen spinach and feta cheese to a clean medium bowl
  • 4. Mix
  • 5. Add salt to the medium bowl
  • 6. Divide evenly
  • 7. Spoon mixture into chicken
  • 8. Close chicken breasts and secure with toothpicks or butcher’s string
  • 9. Sprinkle with dried oregano, dried parsley, salt, black pepper and garlic powder
  • 10. Add coconut oil to the inner pot
  • 11. Pre-heat until hot - Sauté, Normal
  • 12. Add chicken to inner pot
  • 13. Sear each side until golden brown
  • 14. Transfer chicken to work surface then set aside
  • 15. Pour water into the inner pot
  • 16. Scrape bottom to remove any chicken or seasoning that is stuck on.
  • 17. Place a clean rack in the inner pot
  • 18. Place chicken on rack
  • 19. Close and lock the lid and turn the steam release handle to Sealing
  • 20. Pressure cook - Manual, High, 15 min
  • 21. Natural release - 15 min
  • 22. Release pressure - Quick venting
  • 23. Serve immediately
