A lighter sauce thanks to a sneaky dose of pureed pumpkin, plus some extra green veg, makes this healthy version of mac n’ cheese nutritious and delicious.

Step preview

  1. Fill a clean saucepan with water
  2. Heat until boiling
  3. Add macaroni to the saucepan
  4. Cook - approx 9 min
  5. Add butternut squash to a clean steamer basket
  6. place in and cover
  7. Transfer content of saucepan to colander then set aside
  8. Pre-heat broiler
  9. Transfer content of steamer basket to saucepan
  10. Add milk and smoked paprika to the saucepan
  11. Season with salt & pepper
  12. Purée with stick blender until smooth
  13. Add cheese to the saucepan
  14. Stir until melted
  15. Return pasta to saucepan
  16. Add broccoli to the saucepan
  17. Stir until coated
  18. Transfer content of saucepan to baking dish
  19. Sprinkle with parmesan cheese
  20. Broil in broiler until melted - 5 min
  21. Add mixed green salad to a clean serving plate
  22. Serve
