With a great deal of pleasure, I’d like to introduce you to the most delicious weeknight meal you’ve ever met, the Halloumi Souvlaki – aka, a soft warm pita spread lightly with dill spiked tzatziki, piled high with crunchy lettuce, fresh tomatoes, olives and crispy fried halloumi. It’s basically, the definition of ohmygoodness YUM!

    120g (about ½ cup)
  • Dill icon
    2 tsp (3g)
  • Lettuce icon

    1 cup (about 120g)

    2 tsp (10ml)

Step preview

  1. Heat a clean frying pan - medium heat
  2. Add olive oil to the frying pan
  3. Add pita bread to the frying pan
  4. Fry lightly in frying pan until light golden
  5. Transfer content of frying pan to plate
  6. Cover with foil
  7. Add olive oil to the frying pan
  8. Add halloumi to the frying pan
  9. Fry lightly until light golden
  10. Retrieve plate
  11. Spread with tzatziki sauce
  12. Sprinkle with dill
  13. Top with lettuce, cherry tomatoes and pitted kalamata olives
  14. Transfer content of frying pan to plate
  15. Wrap
  16. Serve
