This is one of my husband's favorite desserts. I made him this for Valentine's Day when we first started dating, with fresh strawberries and strawberry fluid gel. It was love at first bite!
Ingredients
Wateras neededcold
Silver leaf gelatin sheet4
Heavy cream500 g
Granulated sugar225 g
Vanilla bean½scraped, halved
Buttermilk600 g
Method
1. Fill a clean large mixing bowl with ice water
2. Bloom silver leaf gelatin sheet the water until softened and set aside
3. Add heavy cream, granulated sugar and vanilla bean to a clean saucepan
4. Heat until boiling and turn off heat
5. Transfer gelatin to the cream-sugar mixture and whisk until dissolved
6. Whisk buttermilk into mixture
7. Strain with sieve
8. Divide evenly between 8 ramekins
9. Chill mixture in fridge until set - approx 6 hr
10. Decorate with fruit or a fruit gel and serve
