This is one of my husband's favorite desserts. I made him this for Valentine's Day when we first started dating, with fresh strawberries and strawberry fluid gel. It was love at first bite!

Ingredients

  • Silver leaf gelatin sheet icon
    Silver leaf gelatin sheet
    4 (about 10 g)
  • Heavy cream icon
    Heavy cream
    500 g (about 2 cups)
  • Granulated sugar icon
    Granulated sugar
    225 g (about 1 cups)
  • Vanilla bean icon
    Vanilla bean
    ½ (about 1.5 g)
  • Buttermilk icon
    Buttermilk
    600 g (about 2 ½ cups)

Step preview

  1. Fill a clean large mixing bowl with ice water
  2. Bloom silver leaf gelatin sheet the large mixing bowl then set aside
  3. Add heavy cream, granulated sugar and vanilla bean to a clean saucepan
  4. Heat until boiling and turn off heat
  5. Transfer gelatin to mixture
  6. Whisk until dissolved
  7. Add buttermilk to a clean glass measuring cup
  8. Whisk milk mixture into mixture
  9. Strain with sieve
  10. Divide evenly
  11. Chill in fridge until set - approx 6 hr
  12. Decorate
