Step preview

  1. Place a clean large saucepan on Drop Scale
  2. Add chopped red onion
  3. Add diced fresh garlic
  4. Add olive oil
  5. Fry until lightly browned
  6. Replace on Drop Scale
  7. Add chopped sweet potato
  8. Add chopped carrot
  9. Add ground turmeric
  10. Add ground ginger
  11. Add vegetable stock
  12. Heat until simmering - high heat
  13. Simmer while stirring occasionally - 20 min, low heat
  14. Add chopped green bell pepper
  15. Add coconut milk
  16. Blend with stick blender until smooth
  17. Serve
