A great alternative to bread with soup, or addition to a brunch. Grated zucchini keeps them moist and a complete cherry tomato in the center is a tasty surprise.

    Method

  • 1. Pre-heat oven - 199°C
  • 2. Prepare a clean muffin pan
  • 3. Add all purpose flour, baking powder, zucchini and cheddar cheese to a clean large mixing bowl
  • 4. Mix well
  • 5. Add milk, egg and olive oil to a clean large mixing bowl
  • 6. Mix
  • 7. Transfer wet ingredients to mixture
  • 8. Mix well
  • 9. Transfer half of mixture to muffin pan
  • 10. Add cherry tomatoes to the muffin pan
  • 11. Transfer mixture to muffin pan
  • 12. Bake until golden brown - 20 min, 199°C
