An easy Italian pear cake is the perfect pairing with a cup of cocoa for breakfast or snack time. This cake is made with sweet and creamy mascarpone cheese and fresh pears, baked until tender and juicy.

Step preview

  1. Pre-heat oven - 175°C
  2. Prepare a clean springform pan with parchment paper
  3. Peel and dice one pear into bite-size cubes
  4. Add pear, lemon juice and ground cardamom to a clean small bowl
  5. Mix until just combined then set aside
  6. Get a medium mixing bowl
  7. Add unsalted butter, mascarpone cheese, egg and vanilla extract to a clean medium bowl
  8. Whisk until smooth
  9. Get a small mixing bowl
  10. Add all purpose flour, baking powder, granulated sugar and salt to a clean small bowl
  11. Transfer dry ingredients to batter and mix
  12. Transfer pear mixture to batter and fold in
  13. Transfer batter to springform pan
  14. Peel and cut the second pear into ⅛” slices.
  15. Add pear to the springform pan
  16. Brush pears with butter and sprinkle sugar over the top
  17. Transfer to oven
  18. Bake until skewer tests clean - 55 min, 175°C
  19. Transfer small bowl onto cooling rack
  20. Add powdered sugar and ground cinnamon to the small bowl
  21. Sprinkle with powdered sugar and cinnamon mixture
