Method
1. Pre-heat oven - 175°C / 350°F
2. Prepare a clean springform pan with parchment paper
3. Add unsalted butter, mascarpone cheese, egg and vanilla extract to a clean medium bowl and whisk until smooth
4. Add all purpose flour, baking powder, salt and granulated sugar to a clean small bowl
5. Mix the dry ingredients together with a whisk until evenly distributed
6. Add the dry ingredient mixture to the wet ingredient in the medium mixing bowl and fold with a spatula until combined
7. Fold the diced pears into the batter
8. Transfer cake batter into the prepared cake pan, use the spatula to flatten the top down
9. Add sliced pears on the top. Brush pears with the reserved butter and sprinkle the reserved sugar over the top
10. Bake for 45 minutes until the top is light brown and an inserted toothpick in the middle comes out clean with just a few crumbs on it
11. Allow cake to cool completely before unmolding from the cake pan
